Karthigai deepam Special Naivedyam Dishes and Recipes

Hi all

Karthigai Deepam is a festival of lights celebrated mainly by Tamil Hindus on the full moon day of the Karthikai month, generally November or December.

You need to prepare some special dishes and recipes for karthigai deepam.

Here are some special karthigai deepam special recipes and Dishes, sweets, naivedyam recipes for thirukarthigai deepam.

 


Vella Seedai for thiru karthigai deepam special

Ingredients:


1. Rice – 2 cups
2. Grated Jaggery – 1.5 Cups
3. Sesame Seeds – 1 handfull
4. Grated Cocunut – 5 tablespoon
5. Cardamom – 1/2 teaspoon

 

 


Methods for Making Seedai for karthigai deepam:


• Soak the rice and rinse it in water and then spread the rice in a towel till it becomes dry
• Soak the sesame seeds in water for 30mins
• Now grind the rice in a mixer to a nice powder
• Add jaggery in a pan with 1/2 cup of water and when it dissolves it water take it and strain the jaggery water to avoid sand
• Again boil the jaggery water along with cocunut and sesame seeds and keep stirring it until the jaggery comes to one string consistency
• Now remove the jaggery from water and add that to the wetrice powder and mix it well along with cardamom powder.
• Keep this mixture aside for atleast one day
• The next day, heat required oil in a heavy bottomed pan
• Make small balls of the vella seedai mixture and drop around 5-6 balls once the oil is hot.
• Deep fry the seedai till it becomes golden color.
• The Delicious Vella Seedai is ready for Neivedhyam for Karthigai deepam as well as for serving.

Maa Vilakku

Maa Vilakku is a traditional recipe that is indispensable in Karthigai Deepam Pooja. This is an instant recipe that is loved by all.

Ingredients for maavu:

Rice flour:1/2 cup

Powdered Jaggery: 1.2 cup

Thick Ghee- 5 tsp

Cardamom powder 1.2 tsp

Method:

Pulse the rice flour and the jaggery in a mixie for 3-4 minutes. The water content in the jaggery will be absorbed by the flour. Transfer the mixture to a plate, add two tsp of ghee and mix well. Add two more spoons of ghee, and make a smooth ball with the flour. Make a small depression in the center to pour ghee, and place the thread to light the lamp. On the sides, apply turmeric and kum kum. Place the maa vilakku in front of the deity.

Milagu Adai:

Another delicious and simple recipe for Karthigai Deepam is Milagu Adai. Here is the recipe:

Ingredients:

Steamed rice 2 cups

Pepper corns: 2 tablespoons

Cumin Seeds: 2 tablespoons

Salt- Add to taste

Method:

Soak the steamed rice for at least three hours. Grind Pepper and Cumin seeds coarsely and keep aside. Grind the soaked rice coarsely and add the pepper-cumin powder and salt to taste. Heat the dosa pan, lightly oil it and drop a ladleful of the batter and spread it across the pan.  Oil the edges of the Adai, flip it and cook for another 30 seconds. Once both the sides are cooked, you can serve them hot.

Adhirasam For Karthigai Deepam

Ingredients:

1. Raw Rice 1 Cup
2. Jaggery 1
3. Cup
4. Coconut
5. Small Piece Chopped
6. cardamom Powder 1/2 Teaspoon
7. Cooking Oil
8. 1/4 Litre for deep frying

 

Method for Adhirasam

• Soak the rice for 30mins and rinse it in water and grind the rice in a mixer to a nice powder
• Add jaggery in a pan with 1/2 cup of water and when it dissolves it water take it and strain the jaggery water to avoid sand.
• Again boil the jaggery water and keep stirring it until the jaggery comes to stone consistency. This means when we take a drop of jaggery juice and pour it in water, it should not dissolve rather we should be able to make a ball out of it.
• Now remove the jaggery from flame and add to the wet rice powder and mix it well along with cardamom powder. Now the adhirasam mixture is ready for preparation.
• Keep this adhirasam mixture aside for at least one day Vella Pagu Adhirasam Pagu
• The next day, heat required oil in a heavy bottomed pan
• Make a small ball of the adhirasam mixture and place it in a oil greased plastic paper. Spread the mixture like vadai and drop it in oil once the oil is hot.
• Deep fry the adhirasam till it becomes golden color.
• Repeat the above steps for the rest of mixture
• The Delicious Adhirasam is ready for Neivedhyam for Thirukarthigai/Karthigai deep am as well as for serving.

Pori Urundai for Karthigai deepam Special

Aval Pori and Nell Pori are the two famous dishes prepared on the auspicious occasion of Thirukarthigai/Karthigaideepam.

Ingredients:


1. Aval Pori 4 Cups
2. Grated Jaggery
3. 1/2 Cup
4. Finely chopped coconut pieces 2 Tablespoon
5. Cardamom powder
6. 1 Teaspoon

Methods for Karthigai Deepam: 


• Add jaggery in a pan with 1/2 cup of water and when it dissolves it water take it and strain the jaggery water to avoid sand.

• Again boil the jaggery water along with coconut and keep stirring it until the jaggery comes to stone consistency. This means when we take a drop of jaggery juice and pour it in water, it should not dissolve rather we should be able to make a ball out of it.

• Now remove the jaggery from flame and add the Aval pori/Nell Pori and mix it well along with cardamom powder. Now the Aval/Nell Pori mixture is ready. Vella Pagu Pori in vella pagu

• Remove this pori mixture and place it in a paper. Make small balls of Aval/Nell pori. Pori mixed with pagu Pori ready for Urundai .The delicious Aval/Nell Pori orundai is ready for neivedhyam.

Kadalai urundai for neivedyam

Ingredients
1. Groundnut – 4 cups
2. Jaggery – 3 cups
3. Cadamom – 6 nos

 


Method

1. Dry roast the groundnut in MW or on a heavy bottomed pan, till it gives out a nice aroma.
2. Rub the groundnuts well with your palm to remove the skin. Remove the skin completely.
3. In a heavy bottomed pan, grate the jaggery, add 1/2 cup water and boil on a medium flame.
4. Boil till the syrup reaches double thread consistency. To check , pour a spooful of syrup into a cup of cold water. If it forms a ball the syrup is ready.
5. Remove the syrup from the stove. Mix the groundnut with the syrup. Allow to cool for around 10 minutes.
6. Shape into balls using a little rice flour , so that the syrup does not stick to your hands.
Kadalai urundai is ready for karthigai deepam

 

Pooran Poli / Puran Poli Recipe
Ingredients

For the Pooranam (Inner stuffing):
1. Chana dal – 1 cup
2. Jaggery – 1 cup
3. Cardamom powder – 1 tsp
4. Coconut – 1.5 tbsp

For Poornam Wrap:
1. Maida – 1.5 cups
2. Oil / Ghee – 1 tbsp
3. Salt – a pinch
4. Water – as required
5. Oil – as required for toasting

Methods

1. First for making the outer wrap : Take maida in a bowl, add oil and salt, Mix well then add water little by little.

2. Form a soft pilable dough just like chapathi dough. Allow it to rest for an hr . Meanwhile lets get on to make the pooranam(inner filling).

3. For the inner pooranam : Dry roast channa dal till a nutty aroma comes, dont let it brown. Then soak it in water for atleast 1 hour.

 

4. Then cook channa dal with water until soft but not mushy(It should still be in shape if you press it). Drain water from channa dal and keep aside.I was not confident in pressure cooking channa dal so cooked it in a open pan.

 

5. Dry roast coconut till the moisture leaves. Grind channa dal with jaggery to a coarse mixture- Use the pulse option in ur mixie and press it on and off, dont make it a paste.

6. Add roasted coconut,cardomom powder to the grinded channa dal jaggery mixture. Make small lemon sized balls and keep it ready. I made the filling little more keeping in mind to make my another favourite 🙂 Wait and watch!!

7. Now pinch equal sized balls(slightly bigger than the channa dal balls) flatten it a bit. Then keep the puranam ball in the center.

 

 

8. Seal it completely by pulling the sides to center just like how we make for stuffed parathas. Then flatten it slightly. Dust flour if needed.

 

 

9. Roll it to a thick or thin poli. Heat tawa carefully place the poli on the tawa, drizzle oil and cook the poli ion both sides until brown spots appear. Serve hot with a tsp of butter
